Italian short story. The ingredients of pizza out of Italy are really different from the original ones, which are mozzarella and tomato sauce.

I have heavily studied the rules which trigger the use of the Congiuntivo, and have accumulated a file containing about 12 different 'triggers'.

But, I could not figure out why the following sentence from the Reading "Tutti Amano La Pizza' uses the conguintivo 'sia', as follows:

"Ingredenti strani, ma che fanno capire quanto la pizza sia famosa e amata da tutti nel mondo."

Is it because the second clause (dependent or subjunctive clause) essentially begins with 'che' (if we ignore the 'ma' in 'ma che fanno capire....' ? .

I've become pretty comfortable with most things that call for the subjunctive, but just was not expecting it in this particular sentence.

"Sia" is the 3rd person singular of verb Essere congiuntivo presente but it can also be used as a conjunction (disgiuntiva correlativa) which is this case.

Please let us know if is clear or if you need some more examples.

@julieta Grazie re the use of 'sia' as a conjunction. I've only seen sia used as a conjunction, if/when used in pairs like 'sia.....sia" for 'both.......and' (as explained in Think In Italian Grammar Lesson 38 , which is why I didn't recognize it when used by itself.  If it's being used as a conjunction, what is its meaning then in the sentence "Ingredenti strani, ma che fanno capire quanto la pizza sia famosa e amata da tutti nel mondo."

It's called congiunzione disgiuntiva correlativa and as you wrote it is commonly used in pairs (sia...sia, sia... o, sia...che). But sometimes, depending on the context and the sentence structure, it can be found alone.
In this case, it has the function of explaining that no matter the ingredients pizza is famous and loved worldwide.

Thank-you Julieta for the very helpful explanation about the ability for 'sia' to be used by itself, and for explaining its meaning in the context of the sentence in question. I will add that to my grammar notes, as I don't just read your responses, I save them to better incorporate them in my usage of Italian.
